Doesn't this look scrumptious? I took this picture back in October 2007, when I discovered this recipe in a calendar. Mmm...I've made it quite a few times since then. Here is the recipe:
Chicken and Cheese Tostadas
6 flour tortillas (6 inch)
1 pkt taco seasoning mix, divided
1 lb boneless skinless chicken breasts, cut into 1/2 " pieces
1/2 cup water
2 cups chopped tomatoes
1 1/4 cups Kraft Mozza-Cheddar Shredded cheese, divided
6 tbsp sour cream
1/4 cup chopped fresh cilantro
Preheat oven to 400 F. Place tortillas in single layer on large baking sheet. Spray tortillas with cooking spray; sprinkle evenly with 1 tsp of the seasoning mix. Bake 7 - 8 minutes or until crisp and golden brown.
Meanwhile, mix chicken, remaining seasoning mix and the water in large skillet. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 5 minutes or until chicken is cooked through, stirring occasionally. Add 1 1/2 cups of the tomatoes. Cook until heated through, stirring occasionally. Remove from heat; stir in 1/2 cup of the cheese.
Spoon chicken mixture evenly over tortillas. Top with the remaining 3/4 cup cheese, remaining 1/2 cup tomatoes, the sour cream and cilantro.

That sounds good! I'll have to try it. My first thought was...so they can buy tortillas in Canada. Do you get them fresh or frozen? Here the supermarkets make them fresh throughout the day.
That sounds delicious except for the tomatoe part...I wish I wasn't so allergic to them! The rest of it sounds really good! I will have to grab some tortilla shells from Costco one of these days and try it!
