In keeping with eating well, I looked through last year's photos, and found one of our meals we enjoy eating. Yes, I love to take photos of food, even my own home cooked meals. We enjoy eating fresh veggies. I never ever buy canned ones. Ever.
The main dish here is halibut, which is laid in a tin foil covered glass dish. In another pan I gently fry onion in butter and add chopped tomato. I place this on the fish, and broil in the oven for 15 minutes or until cooked through the middle. I found this recipe on the James Barber cooking show years ago. He was a local Vancouver chef, and he cooked things that anyone could make; so easy and simple.
The veggie in this meal is sliced zucchini. I heat one tbsp of oil in a pot, add one clove of chopped garlic, fry for one minute, then add the zucchini and heat gently for about 2 minutes. Sometimes I add chopped tomato and put a lid on until heated through, but there's tomato in the fish so I skipped it this time. I picked up this recipe from Robert's brother, Antoon, who is a superb cook.
The rice is Uncle Ben's 10 minute version, with a tsp of curry added while cooking. This meal is very simple to make, and soooo delicious!
